We had some leftover yogurt and orange juice so today, I decided to make some drinkable yogurt smoothies for me and Ian to drink on our way to work :)
This one was super easy. Just put the yogurt and juice in the mixer, mix, and you're done! The recipe calls for a half cup of each but since I was making 2 servings, I used a full cup. It tasted great and only ended up costing $0.90!
So I'm pretty sure that I might have the best boyfriend in the world :) I say this because when we got home from work, he took me to Fred's and bought us some new stuff for the kitchen! Altogether we spent around $35 but it was totally worth it! We now have 2, much needed, extra cooktops and 3 new pans! We previously had only one small cooktop and one small frying pan to work with so this is definitely an improvement! In addition, we were having to fight over using our 1 small cutting board so we splurged and spent $2 for 2 large plastic cutting boards. I think these will also come in very handy :)
While at my sister's last weekend, I had planned on using her oven to try cooking 2 dishes, the Savory Summer Cobbler that I already posted about and this Vegetable Quiche so while shopping for ingredients to make the cobbler, I also picked up ingredients for the quiche. I didn't end up having time to make the quiche so I decided to go ahead and give it a try in our little oven at home.
Unfortunately, just like the cobbler, I don't have the receipt for the ingredients so I can't say the exact cost for this meal however it was definitely an interesting experience!

The recipe pictured uses broccoli however the cookbook lists several suggestions as far as good vegetable combinations. I chose tomato and spinach, mainly because I didn't have to do any steaming beforehand and I wanted to make things as easy as possible :)
I started by chopping the onion and melting the butter in a pan. Once that was done, I threw the onions in the pan to cook for a bit.
While the onions were cooking, I started chopping the tomato and spinach.
Once all the ingredients were prepped, it was time to put them in the pan. I greased the pan with a little Crisco then covered the bottom with the cooked onions and threw the tomatoes and spinach on top. While I was doing this, Ian go to work beating 8 eggs which he poured over the veggies. The last touch was to top it with cheese.
Then came the moment of truth... Could our little oven handle this meal? The answer... kinda. When we put the pan in the oven, we realized that the pan was just a little too big. To fix this problem, we tried using aluminum foil and I believe it worked. At some point, we realized we had a second problem. Not really sure why, but for some reason the pan started to overflow. Thinking back, I probably should have just left it but instead I decided to try and scoop some out so it would stop overflowing.
