So far the fish tacos have been our favorite meal to cook due to the fact that it’s quick, easy and tasty. Plus, since we bought a ten pack of tilapia filets the other day, we have plenty left over and don’t have to go shopping. Needless to say, on Monday I got a little lazy and through together some tacos for dinner. I guess that still counts as cooking but I had hoped to keep learning and trying new recipes, oh well.
Then on Tuesday Ian’s office had catering for lunch and he brought home tons of leftovers for dinner. Even though I wanted to keep cooking, I just couldn’t pass up free!
Keeping up with my recent pattern of laziness, I decided to try another quick and easy recipe: the Best Tomato Sauce found on page 124 of the Good and Cheap cookbook.

Keeping up with my recent pattern of laziness, I decided to try another quick and easy recipe: the Best Tomato Sauce found on page 124 of the Good and Cheap cookbook.
I began by cooking the pasta. For this, I used half of a 1lb bag of spaghetti. It still takes awhile to get the water to boil on the hotplate but as long as I keep the lid on, I can usually get it to a boil in around 20 minutes. Once I got the pasta cooked and strained, I moved on to the sauce.
I began the sauce by adding the olive oil and garlic to a saucepan. After it had cooked for a bit, I added the chili flakes and cooked for about 30 seconds. Finally, I added the canned tomatoes and let that cook for a bit. I prefer my sauce a little thick so like it says in the recipe, I let it cook for about 30 minutes to try and evaporate off some of the water.
This recipe turned out really well. I had some leftover parmesan from the pasta I cooked the other day so I grated it over the top of the sauce. Like the fish tacos, it was quick easy, tasted great and only cost $1.32 to prepare. That’s only $0.43 per serving! I’ll definitely be adding this to my arsenal of “lazy dishes” for nights that I want to take it easy.
