Since Ian and I had plans to be in Tulsa for the weekend, we decided to drive from Little Rock to Fort Smith on Thursday evening. I was excited because I knew my sister had an oven and I would finally get the opportunity to try out one of the oven recipes from the book.
Blueberries have been on sale, so we stocked up the last time we went to the store. We had some in the fridge and some in the freezer so for breakfast, I decided make a blueberry smoothie. I had already tried this twice before and they were good, however I wished that they were a bit sweeter so this time I decided to add a little vanilla. I had hoped to use real vanilla but I sent Ian to do the shopping last night and he came back with imitation but hey, it's the thought that counts right? :)

The vanilla did help with the flavor so I think I'll definitely be adding a teaspoon of vanilla to all my smoothies from now on :)
For dinner, I decided to try baking the Savory Summer Cobbler from page 78 of the Good and Cheap cookbook. Since I was in a new location, I wasn't quite as organized as far as keeping up with the costs and taking photos but I'll post what I've got.

The recipe called for 3-4 medium squash or zucchini. I wanted to try both so I bought 2 medium yellow squash and 2 medium zucchini. Weren't exactly sure what scallions were so we asked an older woman in the produce section. She informed us that they were green onions and laughed about how the names of things are always changing. Once we had all the ingredients, we took them to my sister's place and got started!
With the tomatoes, zucchini, squash, scallions and garlic, there was a lot of chopping to do. This seemed like the perfect job for Ian, what a fine job he did :) The only thing that gave us some trouble was zesting the lemon. We didn't have a zester so we tried using a grater. Needless to say, it didn't work out so well, but we did what we could.

We put the vegetables in the oven to cook for 25 minutes then started working on the topping. Things got a little messy for a bit, but I think it turned out alright in the end. After the vegetables finished cooking, I added clumps of topping to the top and stuck the whole thing back in the oven for another 25 minutes.
Once 25 minutes was up, I pulled out the dish, added some cheddar cheese to the top to melt and it was done!
Unfortunately I forgot to save the receipt so I don't have the cost for this one but I can say that the vegetables tasted awesome! I personally didn't care much for the topping however my sister and Ian loved it so overall, I'd say this one turned out pretty well :)
